Resepi Muffin Labu yang Ringkas tapi sedap alahai...

Assalamualaikum...

Resepi ni nak kena simpan..Justeru itu kita simpan dalam blog sendiri jelah..
Pada peminat labu macam my family..hehehe..silalah try sebab.. sebab sangatlah mudah..tak makan masa n gerenti jadi kot.. I like this kinda recipe...
Part paling susah n mencabar dalam resepi ni ..ialah kupas labu..if pakai labu fresh macam ahkak..
Tapi..ikut resepi sebenar memang pakai canned puried pumpkin..tapi kat Malaysia ni labu fresh berlambak kot kat mana2x..Setengah biji tak sampai RM3..Melampau sangat lah nak pakai yang dalam tin....ishhh,tapi terpulanglaaaa..lalala

tapi rasa sedap tau..angkatlah bakul..eh kita puji resepi tu..
My rustic dulang pembakar tu pun bertahan jelah tengok ye..dah sental pakai Veet pun tu yang terbaik.. Almaklumlah rajin baking n dah 8 tahun guna..
Yang ada  sebekas kosong tu actually ada air dalam tu..ada terbaca dekat blog Hana Kanzawa rasanya..few years ago..nak dapatkan muffin lembut..lembap n gebu biar letak sebekas kosong isi air semasa proses baking.. ok!!

Serves: 2 dozen muffins
 
Ingredients
  • 4 eggs
  • 2 cups sugar (guna 1 1/2 cawan sahaja.,sebab my labu dah naturally sweet)
  • 1 can (15 ounces) solid-pack pumpkin puree - (guna separu biji sederhana besar labu,kukus dan lenyekkan)
  • 1-1/2 cups canola oil (guna sunflower oil)
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda ( tak guna langsung)
  • 1 teaspoon baking powder
  • 1 tablespoon pumpkin pie spice (see Note for substitution)-(guna sedikit serbuk kayu manis)
  • 1 teaspoon salt
  • 2 cups (12 ounces) semisweet chocolate chips
Instructions
  1. Preheat oven to 400°. Place paper liners in a regular sized muffin pan.
  2. In a large bowl, beat the eggs, sugar, pumpkin and oil until smooth. Combine the flour, baking soda, baking powder, pumpkin pie spice and salt; Add flour mixture slowly to pumpkin mixture and mix well. Fold in chocolate chips. Fill greased or paper-lined muffin cups three-fourths to almost all the way full.
  3. Bake for 15-17 minutes or until a toothpick inserted near the center comes out clean. Do not overbake. It makes all the difference between a good and a great muffin. Cool in pan 10 minutes before removing to a wire rack. Makes 2 dozen muffins.
Notes
*You can substitute applesauce for some of the oil.

*If you don't have Pumpkin Pie Spice you can make your own. The substitute for 1 Tablespoon of Pumpkin Pie Spice is: 1½ teaspoons cinnamon, ½ teaspoon nutmeg, ½ teaspoon ginger, ¼ teaspoon allspice.

Resepi ni produce banyak juga... so remaining tu saja je I bakar sekali.. sedap juga... Memang ok resepi ni.. Good n Nutrious untuk anak-anak juga.. Choc chips tu memang buat kids teruja nak makan..
Even tanpa choc chips pun I rasa dah sedap on its own...
