Kek Cawan Mudah (Simple Cupcakes) Resepi Kak Nigella Lawson.

Its all started with one conversation..

Kiss : Mama, nak buat cupcakes
Mama : eh..kita kan dah selalu buat..
Kiss : itu kita buat muffins not cupcakes
Mama : Apa beza cupcakes and muffins?
Kiss : Muffins takde cream .. cupcakes ada.. Kiss nak cupcakes
Mama: oo..macam tu ke?
Kiss : Yerla..mama ni dah besar pun tak tau..
Mama : ok..ok.. ( iskk..takleh tipu dah dia ni)

 before this i used to say that muffins we made were cupcakes.. haha..
i guess my anak dara dah besar panjang..
afterall she is going to be 5yr old next month.

maka..terhasillah cupcakes yang diatas ni..hahaha. 
These were our second attempts.. in one week. but using the same recipe from kak Nigella.
We discovered that, to frost using piping bag was much more easier and tidier.. 

the first one lagi horror.. pakai knife and spoon je..(please don't imagine the outcome..okayy)

But the taste wise.. wallah..
We were very lucky, sebab kali pertama buat and bile gugel recipe terus dijodohkan dengan recipe from her.
So takdela pengalaman pertama buat cupcakes yang memberikan kesan trauma sepanjang hayat or pembaziran.. lalalala

So..super duper easy..without fancy ingredients nor stict procedures to obey..

I rasa macam cupcakes from "Wondermilk" pun ade..-__-

  • 125 grams self-raising flour
  • 125 grams caster sugar
  • 125 grams soft unsalted butter
  • large eggs
  • ½ teaspoon vanilla extract
  • tablespoons milk
  • packet instant royal icing
  • food colouring (for preference colour pastes)
  • cake decorations (wafer roses, sugar flowers, sprinkles, or your favourite sweets/candies)
  1. Preheat the oven to 200ºC/400ºF and line the tin with the muffin cases.
  2. It couldn't be simpler to make cup cakes: just put all the ingredients except for the milk in the processor and then blitz till smooth.
  3. Pulse while adding milk, to make for a soft, dropping consistency, down the funnel. Or using a bowl and wooden spoon, cream the butter and sugar, beat in the eggs one at a time with a little of the flour.
  4. Then add the vanilla extract and fold in the rest of the flour, adding the milk to get the dropping consistency as before.
  5. I know it looks as if you'll never make this scant mixture fit 12 bun cases, but you will. I promise you this mixture is exactly right to make the 12 cup cakes, so just spoon and scrape the stuff in, trying to fill each case equally, judging by eye only of course.
  6. Put in the oven and bake for 15-20 minutes or until the cup cakes are cooked and golden on top. As soon as bearable, take the cup cakes in their cases out of the tin and let cool, right way up, on a wire rack.
  7. Once they're cool, make up a big, uncoloured batch of royal icing, and then remove a few spoonfuls at a time to small bowls.
  8. Using a bamboo skewer, add small dots of colours from the paste-tubs, stirring with a teaspoon and then adding more colouring, very slowly, very cautiously (pastel works best here, whatever your everyday aesthetic) until you get the colour you want.
  9. Use teaspoons to coat the cupcakes with icing and leave each a moment to dry only slightly, on the surface, before sticking on a rose, daisy or whole stash of decorations
For the Frosting.. i buat sendiri.. 


1/2 cup butter
1-1.5 cups icing sugar
1-2 tblsp milk 

Just mix all with electrical mixer. And put some color as you wish.

I love my frosting to be a little bit heavy,sugary and thicker textures rather than soft and fluffy kind of creams version.
Just adjust the ingredients..put more milk and reduce the sugar to get the fluffy version or else to get my preference just reduce milk to one tablespoon and play with the sugar contents. Play around with that two items till you get the right consistency. :)

Please don't judge the appearance.. its surely didn't do any justice to Nigella Lawson.
Taste wise.. memanglah sedap.
Resepi kat atas tu dapat lebey kurang 14 cups. 
Ni buat subuh2 pagi.. so the rest of the cakes.. we decided to frost after school.

Selagi boleh mama tunaikan harapan dan kemahuan Kiss, akan mama coba,sayang.
Jangan mintak bulan and bintang sudah...Tak dapek nak nolong.

selalu belikan cupcakes yang ready made from bakery, tapi yang ni her excitement lebeh sikit..
Faham-fahamla budak-budak..
Plus, she did involved during the preparations.

i just hope she had a good memories with her mother to look back when she all grown up, later2x.
